Angel Hair Pasta with Creamy Tomato Artichoke Meat Sauce

Last week we had like three rainy, drizzly days in a row.  It was so exciting!  Days like that are uncommon where I live.  I knew I had to take advantage and make something cozy for the family.  I decided to make this angel hair pasta with creamy tomato artichoke meat sauce.  It was so good!

I was really craving pasta with a Bolognese type sauce so I went with it.  Bolognese sauces are very meaty tomato based sauces,  sometimes with a little added cream, but usually have celery and carrots.  I opted to use green olives and marinated artichokes because I had both of those ingredients staring at me in the fridge and I wanted the rich flavors as part of the sauce.

This recipe made a large batch.  It gave my family of five two nights of dinner.  Perfect! I used two types of meat: lean ground beef and Italian sausage. I started by browning the meat in a large pot.  After it is browned and drained, you add the onion and garlic until cooked.  Add the canned tomato sauce, artichokes, green olives, and flavor it up with the spices!  Let it cook and allow the flavors to come together: at least two hours.  Right before serving stir in the cream and serve over angel hair pasta.

It was so good! The sauce was everything I was hoping for.  It was meaty, had a large depth of flavor with the olives and artichokes, and was a nice balance of tomato and creaminess.  I added a pinch of red pepper flakes for a little extra heat but that is completely optional. With a glass of red, a sprinkle of parmesan on top, it was the perfect comfort dish for our rainy night dinner.  And the best thing is we got to enjoy it TWO nights!

  1. In a large pot over medium-high heat, cook beef and sausage until done and browned. Drain. Add the onion and garlic and cook until onion begins to soften.
  2. Add the two cans tomato sauce, basil, oregano, parsley, sugar, and red pepper flakes, artichokes, and green olives. Gently stir and salt and pepper to taste.
  3. Reduce heat to low. Cover and let simmer for at least two hours.
  4. Gradually stir in heavy cream just before serving.
  5. Serve over angel hair pasta and top with parmesan cheese. Enjoy!
