Blackberry Almond Crumb Pie

Anybody have any fun Fourth of July plans?  I have a delicious pie recipe for you that would be a fun addition to any Independence Day event!  I know, I know apple pie is the all American pie, but this Blackberry Almond Crumb Pie is summery, festive, and delicious.

We still have not decided how we want to spend our weekend.  We tossed around camping, swimming, or going to water world. The girls are also really excited to get fireworks.  Josh usually has fun taking them to get fireworks every year and on the actual fourth we like to light them in our driveway.  This blackberry almond crumb pie will be a great dessert to enjoy while we do that.

Crumb Pies are a mix between pies and crisp.  In my opinion you cannot go wrong with that ever!  You roll out a single crust for the bottom, fill it with the wonderful sweetened blackberries, and top with the crumb mixture of oats, flour, almonds, brown sugar, and butter.

The addition of sliced almonds to the mixture gives this pie and incredible nutty flavor and gives the crisp  another layer of texture.  It all goes very well with the blackberries.

The color and presentation of this pie is beautiful.  I’m telling you if you are looking for a dessert for this weekend, I have you covered!

Instructions
For the filling:
  1. Preheat oven to 375 degrees F. Lightly grease a 9 inch pie plate. In a large bowl combine all filling ingredients together and gently stir to combine. Set aside.
For the single crust pie:
  1. In a medium bowl, whisk together flour and salt. Using a pastry blender, cut in shortening until it is coarse crumbs. Add the cold water 1 tablespoon at a time and using a fork or pastry blender, mix until dough starts to stick together and is workable to roll out. The dough should not be sticky and should not be dry and crack.
  2. Lightly flour a clean surface. Shape dough into a circle about 1/2 inch thick. Using a lightly floured rolling pin, roll dough out in all directions until it is an 11 inch circle. Use more flour as needed. Loosen from surface with a spatula.
  3. Fold dough in half and carefully move to prepared pie dish and unfold. Trim and flute edges.
  4. Add the blackberry filling and spread evenly.
For the almond crumb topping:
  1. In a medium bowl, whisk together the oats, sliced almonds, flour, and brown sugar. Stir in melted butter and crumble over top of blackberry pie.
  2. Bake in preheated over for about 1 hour until bubbly. Cover pie halfway through cooking time to prevent crumble topping and crust from burning.
  3. Cool slightly on wire rack before serving. Serve with vanilla ice cream!
