When I first started this blog I told myself that it will simply be my hobby. I am a busy stay at home mother of three and knew my time would be limited at this stage of my life. I told myself to have fun with it and don’t stress about it.
Well, the priorities of life have taken over these past five weeks and needless to say I had to take a hiatus from the blog simply because of lack of time and energy. Between a new puppy, multiple birthdays, mine and Josh’s anniversary, a water leak, sick kids, and a husband working overtime, I am one worn out momma! Whew! It really has been non-stop something around here.
But I am glad to be back with a wonderful and cozy fall recipe!
I know it is cliché, but I love pumpkin everything! It seems to me that most pumpkin recipes out there are sweet so I thought I would start off with a savory pumpkin dish. This Creamy Pumpkin Sage and Garlic Pasta is so comforting!
Made with canned pumpkin puree and just a few more simple ingredients, it is a cinch to whip up. This Creamy Pumpkin Sage and Garlic Pasta makes a great side dish or you could add some sausage and make it more of a main dish. That would be delicious!
For this dish, you start with a little garlic sautéed in butter. Next, you add some chicken broth, the pumpkin puree and spices. Let the flavors mellow and come together. Finish it with some half and half or heavy cream and make sure the taste is to your liking. Serve over some pasta of your choice and top it with parmesan cheese if desired. I’m telling this can be made in about 20 minutes.
For this recipe I used cavatappi pasta which is a medium sized spiral tube pasta. It holds its shape really well and I love the fun shape of it! I think any spiral or tube pasta would work great with this recipe but really you could use whatever you have on hand.
The flavors of this dish are so comforting and cozy. Everyone loves it in my house and it is the perfect fall dish.
