This past weekend we went on our first camping trip of the summer. We usually like to go on at least two for the summer. It is such a treat to be away from home in the great outdoors breathing in some fresh mountain air. It is also very busy the week after camping. There is so much cleanup and laundry! Dinners needed to be quick and easy. One of the nights we had this Grilled Salmon with Garlic Dijon Cream Sauce. It is one of our favorite ways to eat salmon.
Summer time entails a lot of grilling for dinner. My husband is the grill master and cooks the salmon perfectly with the right amount char. The sauce can be made quickly and has a rich creamy flavor. Served over the salmon with a nice side salad and it is an easy, healthy meal.
Lucky for us, our kids actually really enjoy salmon too so it is something that we try and eat quite a bit.
For this recipe you start by seasoning the salmon with salt and pepper. On a hot grill, it cooks for about five minutes each side depending on thickness. I used about 5 ounce fillets that were about 1 1/2 inches thick.
For the sauce, begin by making a roux with the butter, garlic, and a little bit of flour. Add the half and half over medium high until it begins to thicken. Reduce heat to low. Lastly, add the Dijon and dill and salt and pepper.
Between the garlic, dijon, and dill, this sauce has a lot of bold flavor. However, the half and half mellows them out and they all work very well together. The flavor of this dish is absolutely outstanding. Simple, healthy, and fast. Enjoy!
