Ok, I have to admit, I am not the best summer time cook for two reasons. One, I love to cook indoors with an oven and make big hearty, cheesy, saucy, full of bread meals which is not really ideal for summer cooking. I love comfort food what can I say! And number two, I am terrible at planning ahead during the summer. All three kids home, 24/7, has my mind spinning in circles.
Thankfully I can fall back on meals like this Grilled Teriyaki Chicken Salad for a quick and easy last minute dinner plans. It is light, easy, and fast!
For this salad all I have to do is remember to thaw some chicken breast and whip up the delicious pineapple and soy sauce vinaigrette. The chicken is marinated in your preferred choice of teriyaki sauce, grilled, and tossed with greens, red pepper, onions, and pineapple chunks, and topped with crunchy chow mein noodles.
It is such a delicious combo of ingredients to start with but the vinaigrette really sets it apart.
Teriyaki and pineapple go together beautifully so I wanted the base of my vinaigrette to have that delicious sweet flavor. Balance it with the soy sauce and then your basic vinegar and oil and it is the perfect dressing.
