Mango and Roasted Chili Margaritas (On the Rocks)

Happy Cinco De Mayo! Boy am I glad it is Friday!  We have a busy weekend ahead.  On Saturday,the girls have soccer games, then we are going to my sister-in-laws baby shower, followed by a date night for Josh and I.  On Sunday we plan to catch up around the house and yard.  All fun events in my book! I thought I would be festive for today and share this Mango Margarita infused with roasted green chilies. Having a freezer full of roasted Anaheim green chilies, I am always looking for ways that I can use them!  If you do not have roasted green chilies, you can find out how to roast them on your own here. They are amazing.

I love, love, love margaritas! Especially with the warm weather ahead I really start thinking about them entirely too much.  And don’t get me wrong, I love to make margaritas every now and again but I am not above those pre-mix buckets where you just add the tequila and freeze.  Those are a summer staple in my house and on those hot summer days, it is the perfect drink to finish the day.

Sometimes it is fun to “mix it up” though.  I love mangos, and they pair well with chilies, and tequila so, yep, the perfect Cinco De Mayo drink.  It is perfectly balanced with lime and mango with just a hint of spice and flavor from the chilies. I wanted to take the slight chili flavor a step further so I rubbed the rim of the glasses with a chili before dipping into coarse sea salt. It was so delicious.

To make this drink you start by making a simple syrup: water, sugar, mangos, and the roasted chilies.  Bring to a boil, until the sugar dissolves.  Let it cool and strain to get just the juice.  Mix everything in a cocktail shaker with ice.  Salt the rim of the glasses, serve on the rocks with fresh lime slices and mango chunks. Put your feet up and enjoy! They are so refreshing and delicious!

For the simple syrup:
  1. For the syrup combine water, sugar, mango chunks, and chilies in a medium saucepan. Bring to a boil over medium heat. Boil until sugar is completely dissolved. Set aside and let cool. Once cool, pour through a strainer to reserving juice. Discard mangos and chilies.
To make the Margarita:
  1. Mix tequila, orange liqueur, mango chili syrup, and lime juice in a cocktail shaker with ice. Shake until blended. Rub rims of glasses with roasted chili, dip in sea salt. Fill glasses with ice and pour mixture into glasses. Serve with fresh lime and mango.
