No Bake Peanut Butter and Honey Granola Bars

This is my first post after launching!  I have to admit, I was really nervous about this whole blog thing the entire time I was working on it.  I’m sort of like an outgoing introvert and putting myself out there on the internet really scared me. I was so intrigued with the blogging life though that I felt like I really needed to just give it a go.  I needed a place to organize my cooking ventures and decorating ideas and this seemed like the perfect fit.  Thank you, thank you all for being super supportive!

Moving on now.  Who loves granola bars?  This is a recipe I created about four years ago.  Since then it has been one of our families favorites.  Having three young kids, granola bars are the perfect snack.  I decided that I needed to make our own because 1. I know what’s going in them and 2.  they taste better.  These bars have a good balance of sweetness from the honey and peanut butter and texture from the oats, nuts, and coconut.  The great thing about making your granola bars is you can really play around with the ingredients.  Just keep the ratio of wet and dry ingredients at a good consistency and you should be fine!


This is a no bake recipe.  You add all of your dry ingredients in a large bowl, heat up the peanut butter, butter, and honey on the stove until combined and mix everything together.  Press the mixture firmly into a pan and chill until ready to be cut into bars!  Easy! I like to wrap mine individually in aluminum foil or plastic snack bag so they are easy to grab and go.  It is so fun making your own granola bars because they make the perfect snack and are so delicious!

Honey and Peanut Butter Granola Bars

  1. Line a 13X9 inch baking pan with parchment paper. Set aside. In a large bowl whisk together oats, flaxseed, coconut, chopped nuts, and salt. Set aside.
  2. In a medium saucepan, melt peanut butter, honey, and butter over medium heat until smooth and creamy stirring occasionally.
  3. Add the peanut butter mixture to the dry ingredients and stir until well combined and moist. Let cool slightly before adding chocolate chips.
  4. Stir in chocolate chips.
  5. Press mixture firmly and evenly into prepared baking pan. Place in refrigerator for at least 1 hour to cool and set.
  6. Cut into 16 bars and store in refrigerator for up to 10 days.
Recipe Notes

After cutting into bars, they can be wrapped in foil or plastic bags individually for better storage.
