Strawberry-Peach Yogurt and Oat Muffins

 

 

Hello! I have a wonderful delicious and nutritious little muffin recipe I’m sharing today. Strawberry-Peach yogurt and oat muffins!  They are so good and come together fairly quickly.  Whether it is breakfast, midmorning snack, afternoon treat with a cup of coffee or tea, a good muffin is such a treat!

 

I even enjoy a muffin even more when I don’t feel so guilty about eating it.  These strawberry-peach muffins leave you feeling guilt free because they are filled with nutritious ingredients like Greek yogurt, oats, flaxseed, and fruit.  Can it get any better than that? If fresh fruit is not in season you can easily use frozen and can also change out the fruit to whatever you have on hand.  I love the combo of strawberries and peaches but blueberries, blackberries, or raspberries would work just as well!

When I made them for my family they were an instant hit!  I am always trying to think of a good snack for my kids.  After school they always seem to be starving so these muffins make for a perfect little afternoon snack.  One is just enough to hold their little bellies over until dinner time and give them that energy they need to make it through the evening.  Lets just say we were all a little sad when they were gone. I guess I will be making another batch soon! Enjoy!

  1. Prepare muffin pan by filling pan with paper cups. Preheat Oven to 375. In a large bowl combine flour, oats, sugar, baking powder, baking soda, salt, cinnamon, and flax seed. Set aside. In a medium bowl mix together yogurt, the egg, vanilla, and the melted butter. Pour the wet ingredients into the dry and stir until just combined. Fold in strawberries and peaches until mixed into batter. Fill batter evenly into muffin cups. Bake for approximately 18-22 minutes until toothpick comes out clean. Cool for 5 minutes then remove muffins from pan.
Recipe Notes

Let melted butter cool slightly before adding to yogurt and egg mixture.

If using frozen fruit, let it thaw slightly for easier chopping.
